Small Barrels magazine visits Las Vegas, Nevada. Read our travel guide vacation planner here.

Las Vegas is an adult playground on a gargantuan scale. In every possible way, it is larger than life. Hotel towers seem to match the height of the mountains that surround the city. Lights and signs blaze in a dizzying array all along “the Strip”. Casinos the size of football fields are surely the eighth wonder of the world, not to mention the custom-built entertainment theatres, malls with stores in the hundreds, and innumerable eating establishments. Paris may be the city of lights, and New York the city that never sleeps. But Las Vegas is surely both.

Though Las Vegas may be synonymous with cheap flights, cheap rates, and cheap buffets (and other things that we shall allow to go unmentioned), it has also become an unparalleled center of world-class accommodations, dining, and entertainment. If you haven’t been to Vegas for a while, just check out any of the films in the “Ocean’s” franchise for a taste of the heights of luxury Vegas can offer. And be aware that even since the making of the latest of these films, the most decadent of the hotels depicted has more than likely been eclipsed by another, even grander one by now.

For incredible accommodation possibilities, consider the Signature at the MGM Grand, a series of luxury condominium towers off but not far from the strip. The Wynn and its newest sister, the Encore, are gorgeous inside and out, and promise a five star experience. While not “cheap” in the absolute sense, the value for your dollar is unheard of almost anywhere else in the world. This is an indulgence that even the more reluctant indulgence seeker can enjoy.

As for food and wine (always at the heart of our quest) you will be beyond satisfied by the options available to you in Las Vegas. Let your sense tingle and your mouth water as you merely contemplate the menus offered at Alex (Wynn), Picasso (Bellagio), Joel Robuchon (MGM Grand), Nobhill (MGM Grand) and Daniel Boulud (Wynn).

Vegas has and always will be what you make of it. However, the possibility to make it an experience of luxury to such a great extent is more real than ever before.

Located in Honolulu, Hawaii Alan Wong’s offers an intriguing fusion of Asian influenced cuisine with native Hawaiin ingredients, all inspired by French technique. The incredibly creative dishes and stellar service make Alan Wong’s one of the most sought after restaurants in Honolulu. Notable dishes include the Ginger Crusted Onaga and the Red Wine Braised Short Rib of kalua pig. We were so impressed by Alan Wong’s that we visited twice during our week-long vacation!

In order to sample a wide variety of dishes about which we’d heard so many rave reviews, we ordered the 5-course Menu Sampling ($65 per person) and were basically blown away at each stage. The flavors were so vivid and appealing, and the presentation absolutely extraordinary!

To begin, we had the “Soup and Sandwich” appetizer. The smooth soup consisted of chilled vine ripened red and yellow tomatoes and was creatively presented in a martini glass, which we were told to boldly sip from if we wished. The soup was accompanied by a thin slice of fried parmesan meant for dipping. The flavor of the soup, as well as the parmesan strip, was simply wonderful. It paired perfectly with the other creations of this appertizer, namely a mouth-watering, tiny grilled sandwich stuffed with kalua pork and truflles. The soup and sandwich also came with three delicate pieces of Nori Wrapped Tempura Ahi served with a delightful Tomato Ginger Relish. This was just the start, and we were already won over.

The next course was the much talked about Ginger Crusted Onaga with Miso Sesame Vinaigrette, and Shiitake Enoki Mushroom Corn. This was very good, although not our favorite dish of the evening. However, many native Hawaiins we spoke with about Alan Wong’s absolutely raved about the Onaga. We found ourselves in raptures over the next course, Pan Roasted Day Boat Scallops with Sauteed Spinach and Mushroom, with a Truffled Foie Gras Coulis. With every bite, you were keenly aware of the freshness and quality of the ingredients. And what a decadent combination!

Just when you thought the menu could not possibly surpass itself, The Red Wine Braised Short Rib with Sauteed Mushrooms and Macaire Potatoes was served. The meat, kalua pig, was prepared to absolute perfection. It was a most tender morsel that melted in the mouth, infused with the red wine sauce and bursting with its own rich flavor.

As you read, you’re likely thinking – what wine on earth do you pair with this variety of dishes and flavors? We couldn’t think of the perfect partner, so we just chose a great wine for its own sake - a rich, deep-colored, and very impressive 2001 Shirvington. It was fantastic and did in fact complement our meal to our satisfaction.

All things must come to an end, but Alan Wong knows how to do this with panache as well. For dessert, we sampled the rightfully famous Chocolate “Crunch Bars”, made of layers of Macadamia Nut Crunch and Bittersweet Chocolate Mousse. Also, a mouthwatering, rich and creamy Lilikoi (Passionfruit) Cheesecake graced our dessert plate. We paired our desserts with cups of 100% Kona Coffee, and may just move to Hawaii for the java. Served in individual French presses, this coffee was paradisiacal.

The Sampling Menu allowed us to taste a variety of his creations, but it also demonstrated that there is little if anything that this chef can’t do. No matter what you choose to eat, your visit to Alan Wong’s is sure to be a memorable one.

Now, a few important notes on logistics: First, reservations are highly recommended. Though we were seated at our reservation time, we have heard from reliable sources that a considerable wait (half hour) may even be experienced even with reservations. If this happens to you, BE PATIENT. It’s worth it! For reservations or for more information, call 808-949-2526.

Second, Alan Wong’s is located on the third floor of a small building on South King street. Parking is tight in Honolulu in general, and the myriad of one-way streets are a challenge to navigate. You may consider taking a cab, or making use of the valet parking for the parkade below the building.

However you get there, get there! An awesome experience.

Overall Dining Experience
We give Alan Wong’s Five Stars – Outstanding!

Alan Wong’s is located at 1857 S.King St., Third Floor, Honolulu, Hawaii. For reservations or for more information, call 808-949-2526 or visit www.alanwongs.com

Halekulani, the “House Befitting Heaven,” is aptly named. Located in Waikiki, the hotel overlooks majestic palms, a private strip of sandy beach, and then beyond into the endless stretch of the blue Pacific. Serenity washes over you at every turn at the recurring sight of native Hawaiin flowers and plants, and in the the welcoming rooms decorated in soothing, muted cream tones. The swaying sound of traditional Hawaiin music floats through the evening air from the lanai of House Without A Key, the hotel’s popular outdoor lounge. Comfort and serenity truly await in this corner of Hawaiin paradise.

Situated directly oceanside, Halekulani looks out onto Gray’s Beach, part of the greater Waikiki beach, traditionally associated with healing and renewal. This location says a lot about the feelings of well being this resort successfully inspires in its guests. Halekulani is close enough to the bustling shops and restaurants of downtown Honolulu – a short walk will get you in range of almost any store or eatery imaginable. Yet with its palm-lined ocean view, serene open air courtyards, and abundance of lush Hawaiin flora, the hotel transports you to a place of peace and calm.

View of Diamond Head from Halekulani Hotel

The lobby itself is remarkable. Without doors or windows, the entrance welcomes you in along with the perpetually perfect Hawaiian air. An enormous, stunning floral centerpiece is the first thing that comes into view, and then the vast open grassy courtyard just beyond. A stroll toward the courtyard reveals several tranquil sitting areas, with comfortable chairs and love seats. The colors of the furnishings and décor throughout the hotel are muted and natural, allowing the vibrancy of the fragrant blooms and lush greenery to take center stage. Stunning stone fountains do double duty in the front seating area by delivering a sense of calm and effectively masking the sounds of traffic which, unbelievably, are quite present just beyond them.

Heading toward the inviting ocean and blue sky, past a row of beautiful shops (artwork, jewelry, resort clothing and sundries) you’ll find Halekulani’s restaurants and the gorgeous pool area. The pool itself is characterized by a stunning orchid pattern, made of over 1 million glass mosaic tiles, inlaid in the floor of its 46-by-82 foot dimensions. The lounge area is comfortable and spacious, with shade provided by enormous palm trees, should you desire. Towels and fresh, comfortable terry lounge chair covers are provided, and attendants circulate to take drink orders. And of course, the view of the ocean is beyond description.

Halekulani Hotel Room - Sitting Area

A wonderful feature of Halekulani is the in-room check-in service. Rather than making our initial arrangements on our tired feet in the lobby, a reception staff member accompanied us to our room and check us in there, personally pointing out the room’s amenities and giving a brief but informative verbal orientation to the hotel. The only draw back to this service is that the room and the view is so incredible, it may be hard to keep your mind on checking in! Our room was quite spacious, and decorated in creamy muted tones, allowing the azur blue of the ocean and sky beyond the window to be the focal point (lof course, you should be aware that not all rooms have an ocean view). We had a balcony that allowed us to gaze over the tops of the high palm trees and to catch a bird’s eye view of the famous “Orchid” pool and the evening hula show at House Without a Key.

Our bathroom was fairly large with a soaker tub and separate shower. It was regularly restocked with good-quality amenities. We appreciated various small but memorable touches throughout our stay, including the bowl of fresh Hawaiian fruit (guava, papaya, banana) awaiting us on our arrival, consistently prompt and thorough housekeeping service, and the presence of little gifts on our pillow left for us at turn down. The excellent service at Halekulani is definitely worthy of further note. Everyone was genuinely friendly, extremely accommodating, and seemed truly concerned that our stay was carefree. We became especially fond of the staff who parked and retrieved our car, each day offering directions and a willingness to help us with any question or concern.

King Bed and Comfortable Linens

Halekulani boasts several dining options within the hotel itself. The House Without a Key is a gorgeous open air lounge area, great for drinks and snacks in the evening, and also open in the mornings for a buffet breakfast. Even locals are drawn to the place, especially for Mai Tais and appetizers at sunset, to watch the sun sink into the ocean beyond the stage to the tune of Hawaiian hula music and mesmerizing hula dancing. This place quickly became a favorite of ours. We sipped many an orchid-bedecked Mai Tai, and tried tasty appetizers such as coconut shrimp, spring rolls and the complimentary “Maui Chips”.

The aptly named Orchids (several varieties of this graceful flower grow throughout the restaurant) restaurant is also open to the air and the ocean. Breakfast is served here (the sweetest pineapple you’ll ever taste!), and a tantalizing dinner menu is also offered (reservations are recommended). Finally, La Mer, Halekulani’s premiere restaurant offers elegant fare and an award-winning wine list. For lighter snacks, drinks or afternoon tea, you may also visit Lewer’s Lounge and the Veranda area. This location also features musical entertainment on certain evenings.

As the Halekulani is located in the heart of Waikiki, you’re in walking distance to huge public beaches and lots of shopping. Nearby stores are sure to satisfy every taste and price point, with the curious mix of swanky shops like Coach in Waikiki’s ”Luxury Row” alongside ubiquitous souvenir and sundries stores. You will not go hungry either – an impressive array of restaurants lines the streets near Halekulani. A particular favorite seems to be The Cheesecake Factory. You’ll recognize it by the throngs of people outside its doors holding those restaurant pager gadgets willing to wait sometimes over an hour and a half for dinner!

Overlooking Waikiki Beach in Oahu

A short distance away are other worthwhile attractions. The lush Honolulu Zoo is practically down the street from the hotel, and is a pleasant way to spend an hour or two. Not too far away is Diamond Head, perhaps the most famous volcano crater in the world. Diamond Head can be seen from Halekulani’s pool area and the open-air areas of Orchids and House Without A Key restaurants. Be warned that if you are going to climb Diamond Head, it is a steep hike – be sure to wear proper foot gear and bring plenty of water. Despite what you may hear about stairs and railings, this is a long, hot walk. The view is beautiful, but you will work for it.

Halekulani staff will be happy to arrange transportation for your touring needs. We recommend taking taxis to restaurants that are just out of driving range to save time navigating Honolulu’s often baffling maze of one-way streets, and to spare yourself the challenge of actually finding parking (you may want to consider this even if you have rented a car). A favorite dining discovery of ours was Alan Wong’s, and we’re convinced that the experience was enhacned by the fact that we didn’t have to locate it and negotiate parking by ourselves! Thanks to a cab ride, we arrived in time and sipped our wine without a care in the world! However, in general, we would certainly recommend renting a car so that you can get out there and experience Oahu. We drove almost the entire perimeter of this beautiful and dynamic island, taking in the phenomenal surfing beaches like Waimea, Makaha, and bohemian surfing towns (you must go to Haleiwa on the North Shore). You can’t go wrong taking in the sights at your own pace, stopping where and when you want to and being open to discovery and adventure.

It’s hard to say too much about the first-class treatment and slice of paradise we experienced at Halekulani. We would highly recommend it to the traveller looking for the best in rest, relaxation, and luxury.

Overall Experience
We give Halekulani 5 Stars- Outstanding!

Honolulu. The name ripples off the tongue like the undulating movements of a hula dance. If there is a paradise on earth, surely it is to be found among the islands of Hawaii, with its white sandy beaches, great stretches of ocean, swaying palm trees, and warm, breezy climate year round.

There are many ways to indulge while in Honolulu and on the island of Oahu. There is, of course, the “natural way,” by strolling the gorgeous beaches, swimming in crystal-clear waters, and simply soaking in the heavenly warmth of the sun.

Then, there are luxury accommodations to enjoy. For instance, Halekulani, an upscale hotel located in Waikiki, whisks you off the busy streets and into a center of tranquility and calm. A luscious, open-air courtyard and impeccably-trained staff greet you upon arrival, and set the tone for the rest and relaxation that await. Unwind in your gorgeously appointed room, and then stroll to the House Without A Key lounge, opening up onto a spectacular ocean view. Sipping your Mai Tai, you will have a particularly memorable experience when the sun sets to the sounds of live, traditional Hawaiian music and dance.

World-class food and wine are also offered Honolulu. We recommend especially a visit to Alan Wong’s, who’s creative Asian/Fusion dishes will thrill the senses. And of course, an outstanding wine list is available, sure to please even the most particular wine connoisseur.

For the jet-set shopper, the streets of Waikiki will not disappoint. Though the obligatory Hawaiian shirt and plastic hula-girl peddling gift shops abound, you will also find Tiffany, Coach, BOSS, and more in Waikiki’s “Luxury Row”.

Consider Honolulu in your upcoming vacations plans. Paradise certainly awaits.

Trendy, contemporary, hip. These are the words that will no doubt occur to you when you walk into Nectar at the Bellagio hotel, struck with the sight of strange stalactite-like pillars and walls painted in a blend of colors. The ambience is more high energy than intimate with its open kitchen concept and brightly lit adjoining cocktail lounge, and there is a slightly crowded feel in the single room dining area, especially if you are seated at a table in the center.

At Nectar, you will find dishes typically offered in fine American restaurants, with an emphasis on interesting combinations and modern presentation. The menu offers familiar starters such as Caesar Salad, and clearly recognizable beef and chicken dishes as entrees – the usual suspects, but prepared with care and presented quite attractively. The 8 oz filet mignon, for instance, was tender and flavorful accompanied by sauteed oyster mushrooms and shallots, and potatoes romanoff with a delightfully crispy exterior. The notable feature of this dish was the intriguing rich, sweet port sauce generously dressing the beef. My dining companion had the hearty 14 oz prime rib. Resting in a pool of au jus, the beef was served with shallots, a warm corn and bean salad, and deep fried potato wedges. The accompanying creamed horseradish sauce was pleasantly zesty.

The wine, a 2000 merlot, was pleasant although not exceptional. I must say that though there was nothing wrong with Nectar, the menu was pricey, especially when compared to the exceptional menus and elegant ambience of Bellagio’s other fine restaurants.

Overall, the food was quite good at Nectar, and our waiter was exceptionally pleasant. The whole experience was overshadowed by the finest of the fine that Bellagio has to offer – a perhaps unfair comparison. You may want to visit Nectar earlier in your trip before trying the likes of Prime, Aqua and Picasso.

Another bit of valuable advice – make reservations for Nectar as far in advance as possible. We were fortunate to secure a table here after we arrived in Vegas, but unable to get into other restaurants at Bellagio on short notice. Late reservations at popular Bellagio restaurants are a gamble, so hedge your bets and book early!

Overall Experience
We give Nectar 3 Stars- Very Good

Nectar is located in the Bellagio Hotel, 3600 Las Vegas Blvd South, Las Vegas, NV 89109. For more information or to make reservations, call 702-693-7223 or visit www.bellagio.com.

Bellagio’s Buffet offers a large dining area, pleasantly lit and decorated, and including the requisite Keno runners. But it’s not the décor that you’ll be writing home about. The emphasis here is on food. Let’s just say that it may well be more economical to list what you can’t find at Bellagio’s buffet rather than what you can.

From prime rib to pizza to pastry, almost nothing is amiss. The Buffet’s food stations are set up in the center of the restaurant with hot foods lining the back wall and cold foods in front. Hot foods include standard breakfast fare, such as scrambled eggs, sausage and bacon. Omelets and eggs can also be made to order. But The Buffet goes beyond what you would probably prepare for breakfast, like hot, juicy slices of prime rib or roast lamb carved for you upon request. Delectable thin crust wood-fired pizzas are also available by the slice, topped with the usual pepperoni slices and mushrooms or more inventive combinations such as jalapeno, jack cheese and fresh-chopped cilantro.

An impressive variety of chilled seafood is also available and, by glancing at the plates of other diners heaped with discarded seafood shells, this is clearly the hallmark of the buffet. We sampled huge, juicy American Gulf shrimp, gargantuan king crab legs and delicious pieces of tender smoked sturgeon.

An array of breads, muffins and pastries is displayed just in front of the hot food stations. You’ll also find a full salad bar, and large bowls of fresh fruit, such as strawberries, melons, and ruby red grapefruit sections. Of course, you’re in Vegas, so don’t forget about dessert, even if you are having breakfast! Make a hot fudge sundae at the soft ice cream station topped with rich bits of toffee, or take that slice of apple pie. You’ve eaten enough for three already, why stop now?

Note that no reservations are taken, but expect to wait in long lines during peak mealtime hours before being seated. Bottom line? If you’re going to do a buffet while in Vegas, go a little upscale and choose the Bellagio. You won’t regret it, although you may need to be rolled back to your room.

Overall Experience
We give The Buffet at Bellagio 4 Stars – Excellent!

Prime accurately describes its décor and ambience as that of a “1930′s speak-easy”. The rich glossy wood of the furnishings, chocolate colored walls, and powder blue draperies evoke a more elegant and stylish time. Despite the overall elegant/retro feel of Prime, oversized art pieces and gigantic vases filled to overflowing with dried flowers inject a contemporary perspective. Of course, one cannot omit noting the spectacular view offered of Lake Bellagio and its famous fountains through the large windows along Prime’s outside wall. Be aware that the dining room is large with partitions throughout and that you cannot view the water show from all tables. For those wanting this view, we recommend booking as early as possible with your request for a table near the windows. Even still, be prepared to be told that your wish cannot be accommodated at this extremely popular restaurant…but go anyway for the beef!

As promised by the restaurant’s very name, the prime beef served was among the best we have ever tasted. The Aged Peppercorn New York Striploin was grilled to perfection, arriving at our table piping hot
and impossibly juicy and tender. The beef sliced like butter and literally melted on the tongue. The meal was accompanied by sweet and flavorful spaghetti squash as well as an array of sauces for the beef,
including a traditional au jus, bearnaise, and a soy-citrus vinaigrette. The sauces were quite good, but the superb beef really had no need of additional dressing. We each ordered Truffle Mashed Potatoes, a rich, creamy side dish to accompany our steak. Though delicious, we found the portion to be overly generous, and one that could easily be shared by two people.

The experience of Prime’s striploin tends to overshadow other aspects of our meal. However, reaching back into the recesses of our pre-beef life, we recall beginning with a Chilled Shrimp Cocktail. Our decision
to share a single order was wise as the paradox of jumbo shrimp has never been made clearer than by this dish. Four incredibly enormous shrimp were served on a bed of shredded ice and accompanied by both a
traditional cocktail sauce and a more unusual soy citrus vinaigrette. The latter was pleasant, but we preferred the cocktail sauce that delivered just the right amount of zest from fresh grated horseradish.
The chef also offered a tasting of a warm butternut squash soup which was creamy, comforting and mildly sweet.

In an unusual twist, we went with a Pinot to accompany our meal. The Sokol Blosser Pinot Noir 1999 (Oregon) was our server’s suggestion. Since we tend toward bolder cabs and shiraz with beef, we were
pleasantly surprised and intrigued by this unique Pinot Noir whose flavor improved significantly throughout our meal. (Hey – if you can’t gamble in Vegas, you’re out of luck from the start.)

For dessert, chocolate reigned in the form of a rich Warm Valrhona Chocolate Cake with homemade vanilla ice cream accompanied by truly excellent coffee.

Our only slight disappointment was in the service experience. It was generally quite attentive, but initially a little confusing. The dining room was quite full, which probably accounts for the longer than usual wait for our main server’s attention and the oversight in not being immediately presented with a wine list. However, the rare Pinot Noir he recommended was worthwhile and performed as he promised.

The food at Prime is exceptional and the ambience/decor alone may even be worth the visit. Our only regret is that, since no other seatings were available during our stay, we could not sample Prime’s versions
of other cuts of beef. Book early (and book often) if you are a beef aficionado!

Overall Experience
We give Prime 4 Stars- Excellent

Prime is located in the Bellagio Hotel at 3600 Las Vegas Blvd South, Las Vegas, NV 89109. For more information or to make reservations, call 702.693.7223, or visit www.bellagio.com.

If you are looking for unique ambience, just try to trump dining at Bellagio’s Picasso where you sit in the shadow of a $30 million dollar art collection, that of the legendary Pablo Picasso himself. Guests are encouraged to take a stroll through the restaurant after their dinner to admire the rare collection that adorns the walls. A meal and art gallery visit, showcasing some of the world’s most coveted art, all in one.

Besides the show stealing artwork, the restaurant offers other charms. For instance, the ceiling in the entrance hall is comprised of an intriguing arrangement of overturned pottery jars. The dining area is a large, spacious room jutting out into several private alcoves. Massive, colorful floral arrangements adorn the center of the dining room while elegant arrangements of cut roses were to be found on every
table. The outside wall of the main dining area is lined with large windows overlooking Lake Bellagio and its famous fountains. Prime tables are located right along the windows for the best view of the stunning water show that runs every fifteen minutes in the evening, an incredible backdrop to a perfect meal.

Lest we forget, food was also served! It was an incredible pleasure to discover first hand how, under the direction of master Chef Julian Serrano, Picasso has earned the prestigious AAA Five Diamond Award of Excellence and the Mobil Five-Star rating. We enjoyed the Five-Course Degustation Menu, and from the very appearance of our amuse bouche(smoked salmon, caviar and crème fraiche on brioche) we were, in a word, transported.

We began with Jonah Crab Salad and a mixed greens with a pleasing vinaigrette. This was followed by the U-10 Day Boat Scallop, a single plump, incredibly tender scallop served with a delicious sauce and an elegant, crisp homemade potato chip.

The next course was the evening’s stellar entrée: a heavenly foie gras with apple, raisin and cranberry compote. The foie gras itself was perfection, with a slightly crisp exterior texture that melted in the mouth. The flavor managed to somehow be light and rich at the same time, and was complemented perfectly by the autumnal medley of the warm fruit compote.

The main entrée was Aged Lamb Roti encrusted in truffles and served with rosemary potatoes, carrots and au jus. The lamb was tender and rich in flavor, counterbalanced by the bitter earthiness of the delicious truffle crust. Every morsel of this dish was, without exaggeration, ambrosial.

For dessert we sampled both the Warm Chocolate Fondant and the Citrus Tart, the former a perfectly rich and comforting conclusion to our meal, the latter a cheerfully colored, refreshing custard wonderfully balancing tartness and sweetness.

The food at Picasso was absolutely superb, matched by its unparalleled service. We were more than simply served, we were attended to by a fleet of servers who ensured that water and wine glasses were never empty, that pesky crumbs were promptly swept from our table cloth, and that our every dining and comfort need was met. Servers managed to be elegant and unobtrusive, yet friendly and accessible.

Stellar. We are counting down the days until our return…

Overall Experience
We give Picasso 5 Stars- Outstanding!

Picasso is located in the Bellagio Hotel at 3600 Las Vegas Blvd South, Las Vegas, NV 89109. For more information or to make reservations, call 702-693-7223, or visit www.bellagio.com.

San Francisco’s renowned gourmet seafood restaurant has found a second home at the Hotel Bellagio. It does justice to the reputation of the original restaurant with delicious dishes, artfully and colorfully presented. The elegant yet comfortable restaurant is divided into two sections, a large main dining room and a more private alcove. Aqua’s large windows overlook the hotel’s elegantly landscaped pool area, a
beautiful view in the early evening and later at night.

Starting our meal with a bang (because why not?), we sampled Roasted Maine Lobster with morrels, spring vegetables and lemon sauce and the Seared Scallops with Domestic Foie Gras. The lobster was exceptionally succulent, complemented by the perfectly restrained citrus flavor of a warm lemon sauce. Scallops were tender and juicy, and the foie gras quite pleasant.

For the main course, I enjoyed the Pan Roasted Alaskan Halibut with artichoke puree and roasted nicoise vegetables. The presentation was colorful, the glossy tops of roasted red bell peppers and zucchini dotting the plate. The halibut itself was tender and slightly buttery crisp on the outside (mmmm….). It worked well with the flavorful artichoke puree.

My dining companion chose Aqua’s signature entree, the Lobster Pot Pie. One of us had to have this meal, or as I should rather say, this “experience”. First, the piping hot pie is wheeled out with much fanfare to your table. (If you don’t want a gaggle of curious onlookers, skip this dish!) The server then cuts away the top part of the pastry, placing it on your plate. Generous pieces of lobster are scooped out of the pie and arranged purposefully on the crust. The sauce, a lobster-truffle reduction, is spooned over the lobster along with the pie’s other components: morrels, truffles, creamer potatoes, peas and carrots. Despite the richness and creaminess of the pie’s ingredients, the flaky texture of the crust remained surprisingly intact.

With the knowledgeable assistance of Aqua’s sommelier, we paired both main course dishes with a crisp, pleasant white wine, La Garenne, Etienne Sauzet 1999.

For seafood lovers who lean toward the elegant side of the ocean, Aqua is a must on your Las Vegas dining list. As with all fine dining in Vegas, do book early to avoid disappointment.

Overall Experience
We give Aqua 4 Stars- Excellent!

Tucked away in the foothills of the Great Smoky Mountains in Tennessee is a world class resort known as Blackberry Farm. Quite deliberately, the proprietors have neglected to post a sign on the highway marking the turn off to this intimate resort destination. Privacy and tranquility are indeed the hallmarks of a stay at Blackberry Farm.

Blackberry Farm, reached by a meandering country road and charmingly enclosed by a white wooden fence, is in fact a majestic 4200 acre property bordering on the Great Smoky Mountain National Park. With these famous mountains as a backdrop, Blackberry Farm itself boasts gorgeous rolling hills, babbling streams, thick clusters of trees and wide meadows where horses graze. Accommodations and services are housed in elegant, country style buildings that blend perfectly into these idyllic Southern surroundings.

Upon arrival for our week-long, early December holiday, we drove up to the tree-bordered entrance road to Oak Cottage where we were promptly and warmly received under a porte-cochere. The impression given by the courteous staff upon welcome is that any and all needs will be met with attentiveness and pleasantness. We found this impression to hold true from the start to the finish of our stay.

After checking in, we and our luggage were chauffeured in one of Blackberry Farm’s motorized carts to our lodgings. (Because of the size of the property, and the hilly terrain, these vehicles are a handy way to get from place to place. By phoning the reception desk at Oak Cottage, you can arrange to be picked up and delivered promptly to other locations on the property.) Luxurious rooms are available in the Main House, a stately, county manor style building, where the dining room is also found. There are more rooms in the neighboring Guest House, both just across the way from Oak Cottage. More private cottage suites are also available in Holly Glade, a secluded, treed space at the bottom of the hill descending from the Main House. Each cottage in the Holly Glade contains two separate units with their own private covered porch. A Holly Glade cottage suite is particularly impressive with its king sized canopied bed, spacious sitting area, large bathroom complete with roomy whirlpool tub, and a generous walk-in closet. Though quite large, the overall impression of the cottage suite is one of cozy luxury due to the rich, colorful fabrics of the furnishings and draperies, the homey antiques and, in no small measure, the wood burning fireplace. A generous woodpile is located just outside of your door should you wish to build a fire. (Of course, a staff member will gladly light the fire for you !) Even the small touches throughout the suite reflect the attention to detail characteristic of Blackberry Farm. The fridge and pantry are well-stocked with complimentary gourmet snack fare, and high-end Aveda beauty and bath products grace the bathroom.

Little could be better than sitting by a roaring fire on a pillowy soft sofa gazing out at the Smoky Mountains from the cottage’s picture window. However, should you manage to leave the comfort of your room, there is plenty to do at Blackberry Farm. You might explore the property by following the paved path, either by foot or by renting a motorized cart for a modest hourly fee. We decided on an initial driving tour, to get a sense of the magnitude of the property as well as spectacular vantage points for future strolls. As well, we noted the occasional hammock and pairs of adirondack chairs placed strategically for your repose during a pleasant walk of the grounds.

For those guests seeking more movement than rest, several unpaved hiking trails have trailheads leading off of the main paved road. Their level of difficulty is noted on the property map, and you might choose to take along your gourmet boxed lunch, provided each day, for refreshment.

Besides exploring Blackberry Farm by foot, a host of other activities are available. Horseback riding and fly fishing on the picturesque Hesse Creek can be done year round. (Fly fishing lessons are available, but should be booked prior to your arrival.) Tennis courts and a heated outdoor swimming pool are open, weather and season permitting.

If you have come to Blackberry Farm for relaxation, you will find it in its ultimate form at the Farmhouse Spa (an Aveda Concept Spa). Massages, manicures, pedicures, facials, makeup consultations and other treatments are offered with superior service in the most incredible surroundings. The converted farmhouse is outfitted with cozy couches, wood burning fireplaces in private treatment rooms, and huge windows looking out onto the mountains. And, of course, only scrumptious, all-natural Aveda products are used. (Again, it is wise to book spa treatments well ahead of your visit to avoid disappointment.)

At the center of any stay at Blackberry Farm is fabulous food. We took our meals in the welcoming, genteel Main House Dining Room. An incredible view of the valley can be enjoyed through the large window at breakfast, where freshly squeezed orange juice and hot buttermilk biscuits are also highlights. In the evening, we enjoyed a roaring fire in the massive stone fireplace, chasing away the chill of the cooler December days. Sumptuous five-course dinners were served with impeccable presentation. Besides excellent beef, lamb and chicken dishes, the chef skillfully incorporates local recipes and ingredients such as grits, fresh trout and, of course, blackberries into the gourmet menu. Our knowledgeable sommelier breathed life into the impressive wine list, drawing from their 8,000 foot wine cellare, making excellent wine suggestions to highlight each of our exquisite meals.

Overall, Blackberry Farm is well worth visiting for those seeking serenity in their surroundings, luxurious amenities and excellent service.

Overall Experience
We give Blackberry Farm 5 Stars – Outstanding!
